Ingredients

canned black beans ( 4 (60 oz) cans rinsed and drained) 3 c
brown rice 6 c
water 3 c
picante sauce (more, if needed) 4
bay leaf 4 t
cumin 4 t
garlic saltInstructions
- Throw all ingredients execpt lime into Instant Pot and cook for 22 minutes.
- When the pot beeps let the pot sit for 10 minutes and then release any additional pressure. Stir a bit and discard the bay leaf. Add in lime juice and additional salsa to brighten it up, if needed.
- Optional toppings: sour cream, tortilla chips, grated cheese, sliced avocado
