Ingredients

240 oz
canned black beans ( 4 (60 oz) cans rinsed and drained)
3 c
brown rice
6 c
water
3 c
picante sauce (more, if needed)
4
bay leaf
4 t
cumin
4 t
garlic salt
 
lime juice (to taste)

Instructions

  1. Throw all ingredients execpt lime into Instant Pot and cook for 22 minutes.
  2. When the pot beeps let the pot sit for 10 minutes and then release any additional pressure. Stir a bit and discard the bay leaf. Add in lime juice and additional salsa to brighten it up, if needed.
  3. Optional toppings: sour cream, tortilla chips, grated cheese, sliced avocado
