Easy Egg White Fritatta


Low-fat fritatta using egg whites and a small amount of Parmesan cheese.

egg whites ((about 16 large eggs))
4 c
spinach or other greens
5 T
finely grated Parmesan
3 T
nutritional yeast
4 T
ground flax meal
1⁄2 t
1⁄2 t
black pepper
1⁄2 t
red pepper flakes
1⁄2 t
garlic powder
oregano, basil, dill (to taste)
2 c
diced, cooked vegetables (steamed or steam-fried, remove all excess liquid after cooking)


1. Preheat the oven to 350F.

2. Spray a 9x13" baking dish with coconut oil spray.

3. Wilt spinach or greens in microwave or by steaming in a pan. Squeeze out all excess liquid.

3. Combine all the ingredients in a bowl, then pour into prepared baking dish.

4. Bake for 30-35 min, until bubbly.
