Black Bean and Red Pepper Dip

This is a tasty southwestern bean dip that was a big hit at our recent "gourmet group" dinner party.

Ingredients

red bell peppers (roasted)

black beans (canned)
1⁄2 c
cilantro (fresh)
1⁄2 c
onion (chopped)
1 clv
garlic (minced)
2 T
lime juice
2 T
balsamic vinegar
1 t
hot sauce
1⁄2 t
allspice
1⁄2 t
cumin
1⁄4 t
black pepper
1
jalapeno pepper (seeded and chopped)
 
salt (to taste)

Instructions

  1. Combine all ingredients in food processor.
  2. Process to the desired consistency.
  3. Serve with baked tortilla wedges or corn chips.
