Black Bean and Red Pepper Dip
This is a tasty southwestern bean dip that was a big hit at our recent "gourmet group" dinner party.
2red bell peppers (roasted)
30 ozblack beans (canned)
1⁄2 ccilantro (fresh)
1⁄2 conion (chopped)
1 clvgarlic (minced)
2 Tlime juice
2 Tbalsamic vinegar
1 thot sauce
1⁄4 tblack pepper
1jalapeno pepper (seeded and chopped)
- Combine all ingredients in food processor.
- Process to the desired consistency.
- Serve with baked tortilla wedges or corn chips.
