Single Serve Jumbo Kitchen Sink Cookie
A single-serve, filling, low carb cookie. I use my toaster oven to bake.
1⁄4 cTHM Baking Blend
1 Tpeanut butter
1 tcoconut oil (optional)
2 tsweetener (or more, to taste)
1⁄4 tbaking powder
1 pnbaking soda (optional)
3 Tmix-ins (ie coconut flakes, chocolate chips, hemp seeds, chia seeds)
- Preheat oven to 350º F. Spray a cookie sheet with coconut oil baking spray.
- Stir all ingredients together in a small bowl. Transfer dough to prepared pan and shape into a level mound. Bake for 13 minutes, or until golden brown and just set on top.
- Allow cookie to cool on pan for a few minutes. Enjoy warm.
