Ingredients

medium sweet potatoes, cut into thin julienne strips
1 1⁄2 T
coconut oil, melted
1 1⁄2 t
salt
1 1⁄2 t
paprika, smoked or regular
1 t
garlic or onion powder
 
black or cayenne pepper (to taste)

Instructions

1. Preheat oven to 375F.

2. Place the potatoes in a single layer on or or more large baking sheets. Drizzle on the coconut oil and seasonings and mix with your hands, making sure all the potatoes are glazed with oil and sprinkled with seasonings.

3. Bake for 30-35 minutes, turning once or twice. Broil at the end for extra crunch, but be sure they don't burn!
